I am quite sure that now you’re thinking you would like to try to make one for your Sweetheart, children or friends! Well, here is MY recipe… (I can guarantee on the result!)
- 3 free-range eggs, separated
- 4 spoons of white sugar
- 500g of mascarpone (I like it super creamy)
- 200ml of double cream
- 30-35 Savoyard biscuits
- Espresso coffee
- Cocoa powder for dusting
In a large bowl, mix the egg yolks with the sugar until you obtain a creamy mixture. Add the mascarpone and mix until well combined.
In two separate bowls, whip the double cream and the egg whites (make sure the bowl is perfectly clean, otherwise the whites won’t get anywhere near solid). One at a time, mix them both with the whole mixture, until you get that delicious cream which will make you lick your chops.
Spoon a third of the mascarpone in a flat and square/rectangular bowl/plate.
On the side, prepare a lot of Espresso and leave it in a bowl, ready to use.
Dip every Savoyard biscuit on both sides (be careful not to leave them in the coffee too long, especially if it’s still hot, otherwise they will melt) and then lay them on top of the mascarpone.
Spoon the second third of mascarpone and then another layer of biscuits. When you have done so, you can spoon all the remaining mascarpone on top, making sure that is completely flat.
Dust with cocoa powder and chill in the fridge for 3-4 hours.
